The 50% Iberian Cebo de Campo ham always has a layer of external fat (yellow bacon) higher than the rest of the Iberian hams. Thanks to this layer, the ham can last all the months necessary for its proper curing.
The total use of the ham can vary between 38% and 44%.
This means that not all the pieces are the same and that it can vary by up to half a kg of meat up or down in an 8kg ham and that the normal thing is that there are about 3.2kg of meat left in an 8kg ham once we have removed it. the bone and the external bacon.
Normally the larger the ham, the more % of meat it will have.
