Externally it is identified by its elongated and stylized shape, its black hoof, its narrow shaft and the golden color of the fat. When cut, it presents numerous streaks of fat with small white dots that denote its low salt content and slow curing. Its flavor is soft and sweet, with a fat very rich in nuances that explodes on the palate producing an explosion of flavors. It has very balanced and intense aromas.
