A gastronomic gem appreciated by the best gourmets in the world, and without a doubt, at the same level as the best 100% Iberian shoulders, due to its double montanera.

It comes from the forelimbs of pigs. It is a piece smaller in size than ham but provides an exquisite taste to the most demanding palates since, by having the ideal balance between fat and lean, its meat is even juicier.

Does my shoulder have a lot of fat ?:

The Iberian acorn-fed shoulder (75% RI) always has a layer of external fat (yellow bacon) thanks to which the shoulder can last all the months necessary for its correct curing.

The total utilization of the pallet can vary between 28% and 33%.

This means that not all pieces are the same and that it can vary by up to 400 grams of meat up or down in a 5kg pallet and that it is normal for there to be about 1.4kg of meat in a 4.5-5kg pallet. kg once we have removed the bone and the external fat.

Normally the larger the shoulder, the more % of meat it will have.
