Description

We proudly present one of the most precious pieces of our offer: Iberian Bellota Ham at 75% RI (Red Seal). This piece is distinguished by its unique quality, at the same level as the best 100% Iberian hams . In addition, it has unique acorn levels on the market.
We offer the vintage of the year 2020.

Does my ham have a lot of fat ?:

75% Iberian acorn-fed ham always has a layer of external fat (yellow bacon). Thanks to this layer, the ham can last all the months necessary for its proper curing.

The total use of the ham can vary between 38% and 44%.

This means that not all the pieces are the same and that it can vary by up to half a kg of meat up or down in an 8kg ham and that the normal thing is that there are about 3.2kg of meat left in an 8kg ham once we have removed it. the bone and the external bacon.

Normally the larger the ham, the more % of meat it will have.

In any case, if you think that the yield of your ham is clearly lower than these percentages, do not hesitate to contact us.

In addition, all our sausages are controlled by batches assigned to each slaughter so that the technical quality control services exhaustively and continuously supervise the extensive production process of the different Iberian products. At Don Ibérico, we subject all our products to the most rigorous and recognized quality controls.

Artisan elaboration and Technological Innovation. Today, as in the past, Iberian pig products are made according to traditional methods, but the incorporation of new industrial processes and the most modern laboratory techniques have allowed us to raise health controls and final quality to optimal levels.

Conservación

Iberian ham is a delicate product that should be taken care of so that it remains in optimal conditions.

  • The ham should be stored tightly covered in a cool, dark place that is not excessively cold.
  • It is advisable not to cut more quantity than what is going to be
  • At the end of a cutting session, protect the area with some of the thicker pieces of bacon and rind, removed at the beginning, so that the surface fat always remains fresh. Additionally, you can also wrap the ham with waxed paper or transparent film.
  • For better protection, it is also recommended to cover the ham with a kitchen towel.
